Keto-less Thanksgiving
We’re getting through with Keto. Me more so than Tony. He’s
really missing bread. I’m really missing fruit.
I’ve been looking into recipes to possibly have a keto
Thanksgiving on Pinterest. Reading some of the recipes and seeing some of the
pictures sounded promising. But no way I’m going to sacrifice Thanksgiving by
going keto. Tony was definitely not on board. But, if we could have some keto,
it’d be worth it, right? What to do?
Sunday we did a “Thanksgiving test run” with a roasted
chicken, keto gravy and keto stuffing. On Saturday, I made the keto bread for
the stuffing. It looked like drop biscuits and had almond flour (our first time
trying), eggs, baking powder and cheddar cheese. Taste – well, not quite like
biscuits, but not AWFUL. Think really dry biscuits with a slightly cheesy flavor. Tony was blah about them, but I said, maybe when we
turn it into stuffing, it’ll be fine.
On Sunday, I assembled the stuffing (pretty much the same ingredients that are in my Grandma's recipe, with the exception of the bread) and then tossed the
chicken (coated in butter) into the oven. And prepped to make the gravy (with
the drippings, butter, onion, chicken broth and a little Xanthum Gum -- our first
time trying – was told that a little goes a long way and too much turns into gum,
hence the name).
How’d we do? We’re definitely NOT going to do a Keto
Thanksgiving. That’s for sure. The stuffing was pretty bad. The gravy was
actually good. The chicken, just fine. But, stuffing is one of my favorite
parts of Thanksgiving (my Grandma's recipe with sausage, onion, celery, butter and good old Pepperidge (sp) Farms stuffing mix) -- and this keto dressing just didn’t cut it. We’ve already tried to do mashed
cauliflower instead of mashed potatoes – that didn’t go over very well.
I need to be wary of what reads and looks good on
Pinterest. A lot of them – not so much. Some posts are pretty honest about
disclosing that it doesn’t taste like the original. But others overly hype up the goodness that just isn't good.
